New Golf Course Complete!!!
A strong October allowed us to clean up all our loose ends with the golf, we are now preparing the greens for winter on the new course with tarps and snow fences. We have also covered the surrounds with local cattle manure from a neighbor, this was a trick we used 20 years ago on the sand dunes areas and it proved to work quite well in establishing turf. Overall Rod Whitman is very pleased with the layout and how it finished off. He considers these new greens some of his best work he has done since the Original 18 at Wolf Creek. We still have some seeding to complete in the spring in some areas but our superintendent Rick David is still confident we may be doing some golf late summer 2008. |

Phase 3 in Villages fully under way!!
After the completion of the golf course we turned our attention to constructing the roadways in Phase 3. We are now in the final stages of road construction with sub-grade completion to happen by Nov. 1st. With the completion of Phase 3 the overall villages project will be constructed in a two year window instead of a 3 to 5. Originally our projections included only phase 1 and 2 based on pre-sales, however with the early sellout of both phases it was decided phase 3 could proceed. November should also see the completion of most of the utilities to the lots, presently sewer and water will be under way the first part of the month followed by Fortis and the power installation, including street lites. Weather permitting the roadways will get final shaping and gravel before winter settles in. |

From the Golf Shop – Jae Stiles
It is hard to believe the golf season is over. Even though the course is closed the Proshop and office are still open 9:00am to 3:00pm Monday thru Friday for any of your Christmas needs. The Proshop will be open on the weekends for the Christmas season, hours and details to follow at a later date. Wolf Creek has access to a great selection of fabulous Christmas ideas for individuals. As well, for Corporate Christmas products we offer; team jackets, hoodies, logoed balls, putters, etched glassware, blankets, t-shirts, bags or hats. We offer all corporate products at competitive corporate pricing (quantity discounts available). If you have any ideas or special requests we will do our best to find it.
Arriving shortly for the 2007 Christmas season, and new for us, will be baby wear, Great Idea for Baby Showers. We have baby Foot-Joy’s, logoed bibs, baby beanies and assorted infant wear from 0 to 24 months for all new golfers to this world.
We are hosting a Member-Staff Christmas Party on Saturday, November 24th. Cocktails will be at 5:00pm and dinner at 6:00pm so with that in mind Chris, Jay and me will have the Proshop open in the afternoon for anyone needing to do a little Christmas shopping. First off, I would like to personally thank everyone for your support this year. The special events were a success and the feedback was great. With our strong kitchen brigade we plan to have more special event in 2008.
Keep your eyes open for new events next year. They will include: A Night of Murder Mystery, A Thanksgiving Day Dinner, Romancing the Wolf on Valentine’s Day and more!

Eggnog Cheesecake with Mango Coulis
Ingredients:
Crust
- 1 cup all purpose flour
- 1 cup gingersnap cookie crumbs, (about 2 1/2 c cookies), plus extra for coating the sides of the cheesecake
- dash of salt
- 1/2 cup unsalted butter, melted
Filling
- 2 1/2 lb. cream cheese, room temperature
- 1 3/4 cups sugar
- 3 tbsp all purpose flour
- 1 tbsp vanilla extract
- 1 tbsp rum extract
- 1 tsp nutmeg
- 1/4 tsp salt
- 5 egg
Directions:
Crust
- Preheat oven to 350 F.
- Combine flour, gingersnap crumbs and salt in a bowl. Add melted butter and mix until an even, crumbly texture.
- Press crust into a lightly greased 10-inch springform pan, pressing up the sides a bit.
- Bake for 12-15 minutes. Allow to cool.
Filing
- Reduce oven temperature to 300 F.
- Beat cream cheese until smooth and fluffy, scraping the sides of the bowl often.
- Gradually add sugar, again scraping the sides of the bowl often. Add in flour, vanilla, rum extract, nutmeg and salt and blend.
- Add eggs, one at a time, mixing well after each addition. Scrape filling over baked crust.
- Place cheesecake pan into a larger baking pan. Pour boiling water 1 inch up the sides of the pan. Bake for 1 hour and 30 minutes.
- Allow cheesecake to sit for 1 hour (out of water) before chilling. Chill over night.
Mango Rum Coulis
1 mango, peeled and sliced
1 tablespoon caster sugar
2 tablespoons rum
½ cup water
- Heat a lightly greased large frying pan on high. Sauté the mango and sugar for 1-2 minutes, stirring, until sugar dissolves.
- Stir in rum. Bring to boil. Add water. Blend mango mixture in a food processor or blender until smooth. Cool.
